Preparation time: approx. 20 minutes

• 2 tablespoons butter
• 2 eggs
• 2 tablespoons sugar
• 250 ml milk
• 200 g flour
• 1 teaspoon baking powder
• Pinch of salt
• 2 tablespoons vegetable oil or clarified butter
• Maple syrup
• Blueberries
• Mint

Pancakes

1. Melt the butter. Whisk the eggs and sugar. Stir in the milk and butter.

2. Add the flour, baking powder and salt to the egg mixture.

3. Heat the clarified butter in portions in a pan and bake 3-4 pancakes at a time until golden yellow.

4. Serve the pancakes on plates, add the blueberries and maple syrup and enjoy.
